The Vasilopita is not just a cake.
It is a ritual, a wish and a symbol of abundance for the year ahead.
This festive Vasilopita cake, with silky pastry cream and white chocolate, combines sweetness, care and good fortune — perfect for welcoming the New Year with love and positive energy.
Created by Alinda Kanaki, together with her collaborator Jenny Astrea, in a warm, festive atmosphere.
And of course, Luna 🐶🌙, Alinda’s beloved white Bichon Frisé, is always present, spreading joy and good vibes.
📝 Ingredients
Sponge Cake

4 eggs

1 cup sugar

2/5 cup flour
-
1 sachet baking powder
-
1 tsp vanilla
White Chocolate Pastry Cream
-
4 cups milk
-
1 vanilla pod
-
1 cup sugar
-
3 tbsp flour
-
3 tbsp cornflour
-
4 egg yolks
-
100 g white chocolate
Decoration
-
Pomegranate seeds
-
Roasted hazelnuts or pistachios
👩🍳 Method (Short Version)
Whisk eggs and sugar until fluffy. Add vanilla, baking powder and sifted flour. Bake in a greased 18 cm pan at 165°C (330°F) for about 35 minutes. Let cool completely.
Heat the milk with vanilla. Mix egg yolks, sugar, flour and cornflour, then slowly add to the hot milk, stirring until thick. Remove from heat, add melted white chocolate and whisk until smooth and airy. Cover with plastic wrap and chill for 2 hours.
Slice the sponge into 3 layers. Lightly soak with milk. Spread the cream between layers, adding nuts and the lucky coin if desired. Cover the cake with the remaining cream and decorate with pomegranate seeds.
